Original: the benchmark

Sashimi-grade Atlantic salmon, cured 360°, then slowly dried and cold-smoked over pure beechwood. Firm, flavour-rich outside and a tender, succulent centre. Savoury, clean and balanced. This is Ukola as it was first made.

Maple Glazed: the salmon candy

Our Original Ukola finished with a handcrafted pure maple glaze. Lightly sweet, delicately smoky, and made for people who like salmon candy that still tastes of the fish.

Aleppo Chilli Maple: the bold one

Maple sweetness meets the gentle warmth of Aleppo chilli, which has mild heat, a slight fruitiness and deep red complexity. Sweetness comes first, then warmth, then a clean smoky finish. The heat brings out the richness of the fish without drowning it.

How to taste it

Start with Original, move to Maple Glazed, and finish with Aleppo Chilli. Going from savoury to sweet to spiced lets you pick up how each flavour builds on the last. Slice thinly or cube, and serve slightly chilled.
