Ukola is crafted from fresh, sashimi-grade Tasmanian salmon that we trim, debone, and cut into precise cubes while keeping the fillet intact on the skin. Each cube is coated on all sides with our dry curing blend, allowing a full 360° cure that draws out moisture evenly and forms a naturally firm exterior with a tender, low-salt centre. The entire fillet is then gently dried to develop Ukola’s signature flavour-concentrated outer shell before being cold-smoked with pure beechwood, allowing smoke to circulate around and into every cube. The result is a refined, small-batch delicacy with deep, clean flavour and a unique texture — firm outside, succulent inside — crafted fresh to order with exceptional purity and craftsmanship.
