Ukola is our signature interpretation of cold-smoked salmon — refined, structured, and crafted for depth of flavour rather than mass production.

We start with fresh, sashimi-grade Atlantic salmon, selected for fat balance and texture. Each fillet is carefully trimmed, deboned, and cut into precise cubes while remaining intact on the skin, preserving the integrity of the fish and allowing even curing throughout.

Every cube is coated on all sides with our dry curing blend, enabling a full 360° cure that gently draws out moisture while maintaining a naturally low-salt profile. This process creates Ukola’s distinctive contrast: a firm, flavour-concentrated outer layer with a tender, succulent centre.

The cured fillet is then slowly dried to develop its structure before being cold-smoked with pure beechwood. The smoke circulates around and between each cube, delivering a clean, elegant aroma without overpowering the salmon’s natural character.

The result is a small-batch delicacy with a unique texture and refined finish — savoury, balanced, and deeply satisfying. Ukola is crafted fresh to order and designed to be enjoyed sliced, cubed, or served as a centrepiece for sharing.
