Salmon candy, also known as candied cold-smoked salmon, is traditionally made by finishing smoked salmon with a light maple-based glaze.

Our Bourbon Maple Salmon Candy is a naturally cold-smoked Ukola, finished with a handcrafted bourbon-maple glaze for a balanced sweet–smoky flavour. It is never frozen, contains no preservatives or additives, and is produced in small batches.

Each fillet is expertly cut and gently cured 360° to create a naturally low-salt, firm outer layer with a tender centre in every cube, then cold-smoked with beechwood for a clean, elegant aroma.
